Delightly Inspiration

Delicious turkey koftas with a Delightly inspired tzatziki yogurt dressing, served with a fresh Greek salad. A summer BBQ winner!

You will need 8 wooden skewers, pre-soaked in warm water

  • 500g turkey breast mince
  • 1 small shallot, finely chopped
  • 2 teaspoons ground cumin
  • 1 garlic clove, crushed
  • 1 teaspoon fresh mint leaves

For the tzatziki:

  • 200ml Delightly Greek Style Natural Yogurt)
  • 1/2 cucumber, deseeded
  • 1 garlic clove, crushed
  • Handful mint leaves, chopped
  • Salt and freshly milled pepper

For the Greek salad:

  • 250g cherry tomatoes, cut into quarters
  • 1 shallot, trimmed, thinly sliced
  • Handful of black olives
  • 1 tablespoon fresh mint leaves, torn
  • 1 tablespoon flat-leaf parsley, torn
  • 1 tablespoon fresh lemon juice


For the koftas, combine mince, onion, cumin, garlic and mint in a bowl.

Divide into 8 and mold around the skewers to make a kofta shape.

Preheat a barbecue, grill or chargrill to high and spray with low calorie oil. Cook the koftas, turning occasionally for 6-8 minutes or until golden and cooked through.

To make the tzatziki, coarsely grate the cucumber, sprinkle with a pinch of salt and squeeze to remove the liquid. Place the cucumber into a bowl with the yogurt, garlic, mint, salt and pepper and mix well.

Mix the Greek salad ingredients together and arrange onto plates, top with koftas and serve with tzatziki.
