Low Fat Waldorf Salad

Layers of fresh summer salad, chilli and lime dressing with succulent prawns. Serve in quirky picnic jars for a delicious lunch to go!

You will need 4 large kliner style jars or containers

Ingredients

  • 1 romaine lettuce, washed, trimmed and finely shredded
  • 1 small red onion, thinly sliced
  • 1 red pepper, cut in half, deseeded and cut into strips
  • 4 small cooked beetroot, thinly sliced
  • 1/2 cucumber, cut in half and finely sliced
  • 4 vine-ripened tomatoes, cut into small chunks
  • 300g can of sweetcorn, drained
  • 8 radishes, thinly sliced
  • 500g cooked prawns, peeled
  • Salt and pepper, to season

For the dressing:

  • 200ml Dale Farm Delightly Greek Style Natural Yogurt
  • the juice of a lime
  • 1 teaspoon stevia
  • Pinch of chilli flakes
  • 1 tablespoon reduced sugar ketchup

Method

Layer the prepared ingredients into the jars.

In a bowl, whisk the dressing ingredients together and pour into the jars just before serving.
